Real random question, What text editor are you using?

Also, are you just opening it up locally then saving it into the vagrant file? Or area you opening it from the terminal?

I'm using Sublime Text 2 in the videos.

I'm opening the files locally through my file system, not through the Vagrant ssh or from the terminal.
